The beauty of Korean food comes from the time and effort that goes in to making even the simplest dish.
1. Take some beef, slice it up, and leave it in cold water for about 30 minutes, replacing the water every now and then. This is to drain out the blood from the beef which will help the dish keep its white color.
2. Marinade the beef in soy sauce, sesame oil, garlic, salt, and pepper. Make sure you double the garlic. Leave for 30 minutes.
3. Leave the sliced rice cake (tteok) in cold water, allowing it to soak up the moisture. This will help the rice cake pieces retain its shape and texture while cooking.
4. This step is optional, but I wanted my soup to have a bit of an extra flavor to it. Boil some water with dried seaweed pieces. Set the water aside.
5. Cook the marinaded beef until the outside is brown.
6. Normally you’d put in scallion in the end, but I only had bok choy, and when life gives you boy choy, you cook it. Slightly.
7. Pour in the water and bring it to a boil.
8. Try to get rid of any foam that comes to the top as you cook… It’s a Korean thing. Just do it.
9. Add the rice cake, continue to boil.
10. Whisk two eggs and pour it in. Stir slowly.
11. Crush some dried seaweed on top and you’re done!
